Roasted Apple + Shrikhand: Kunal Kapur’s Easy Dessert in Under 30 Minutes

Celebrity chef Kunal Kapur has shared a simple dessert recipe that combines air-fried roasted apple with smooth cinnamon shrikhand.

The dish can reportedly be prepared in under 30 minutes and uses everyday ingredients including apple, hung curd, sugar, cinnamon, walnuts and honey. Kapur described it as a sweet, spiced and crunchy dessert that comes together with minimal effort. (Hindustan Times)

Ingredients

To prepare the dessert, you need:

  • One apple

  • Half a cup of hung curd

  • One-fourth cup of sugar

  • Half a teaspoon of cinnamon powder

  • A few toasted walnuts

  • Two teaspoons of honey

  • A mint sprig for garnish (Hindustan Times)

How to Roast the Apple

Wash the apple, cut it into two halves and remove the core while keeping the skin intact.

Place the halves in an air fryer and roast them at 185°C for about 15 minutes. The juices collected in the centre should be retained for added flavour. (Hindustan Times)

Preparing the Cinnamon Shrikhand

Add hung curd, powdered sugar and cinnamon powder to a mixing bowl.

Whisk the ingredients for one to two minutes until the mixture becomes smooth and fluffy. More cinnamon may be added according to taste. (Hindustan Times)

Final Assembly

Place the roasted apple halves on a serving plate and add a generous spoonful of cinnamon shrikhand over each piece.

Top them with chopped toasted walnuts, drizzle with honey and finish with a mint sprig. Almonds or pine nuts can also be used as alternatives. (Hindustan Times)

The recipe offers a creative way to use an air fryer for dessert rather than only for savoury snacks.
