Chicken Ghee Roast With 39g Protein? Try This High-Protein Recipe!

Craving a rich, restaurant-style chicken dish without completely giving up on your nutrition goals? A nutritionist-approved chicken ghee roast recipe promises bold South Indian flavours while delivering 39 grams of protein per serving.

The recipe was shared by certified nutritionist and chef Aathira Sethumadhavan, who recreated the classic dish using roasted spices, dried red chillies, tamarind, curry leaves and ghee.

Restaurant-Style Flavour at Home

The recipe uses 1 kg of bone-in chicken, marinated with curd, ginger-garlic paste, turmeric, black pepper, lemon juice, ghee and salt.

The chicken is then cooked with a freshly prepared masala paste made from Byadgi chillies, Kashmiri red chillies, coriander seeds, cumin, peppercorns, fenugreek, garlic and tamarind.

Ingredients for Four Servings

For the marinade:

  • 1 kg bone-in chicken

  • 150 g curd or Greek yoghurt

  • 1 tbsp ginger-garlic paste

  • ⅓ tsp turmeric

  • ½ tsp black pepper

  • 1 tbsp lemon juice

  • 2 tsp ghee

  • Salt

For the masala:

  • 6–7 Byadgi dried red chillies

  • 4–5 Kashmiri dried red chillies

  • 2 tbsp coriander seeds

  • 1 tbsp peppercorns

  • 1 tbsp cumin seeds

  • ½ tsp fenugreek seeds

  • Garlic and tamarind

The final roast also includes onions, curry leaves, ghee and a small amount of jaggery or sugar to balance the spice.

How to Prepare It

The chicken should be marinated for at least one hour.

The dried chillies and spices are dry-roasted and blended with garlic, tamarind and warm water to create a smooth masala paste. Onions, curry leaves and the masala are then cooked in ghee before adding the marinated chicken.

The dish is covered and cooked on low heat for approximately 25–30 minutes, until the chicken is fully cooked and the masala becomes glossy and begins releasing ghee.

Nutrition Per Serving

Without optional cashews, each serving reportedly contains approximately:

  • 435 calories

  • 39 g protein

  • 22 g fat

  • 20 g carbohydrates

With cashews, the calorie count rises slightly to around 446 calories per serving.

The chicken ghee roast can be served with neer dosa, paratha or steamed rice.
